At the heart of our store, the pralines stand out as a signature of Maison Pralus. They are made from dried fruits chosen from the best origins: hazelnuts, almonds, and pistachios. They are then meticulously refined in our conches to obtain a fine and irresistible paste.
Pralines enrich our range of candies, our infernal bars and our creamy hazelnut cream. Our Roanne pastry chefs also incorporate them into their desserts, demonstrating their mastery and creativity.
The recipe for our chocolate remains constant: 75% cocoa, supplemented by balanced proportions of butter and sugar. This method allows you to appreciate the nuances between different types of beans, but also the variations linked to their origin. Indeed, the terroir influences the flavor of each cocoa.
Our assortment also includes three special blends: Fortissima 80%, Djakarta 75% and Caracas 75%. Each recipe reflects the expertise and history of François Pralus. Also note, our milk chocolate, named Mélissa, stands out for its intensity with 45% cocoa, offering a unique rich experience for a milk chocolate.
