Pastry
Since its creation in 1948, Maison Pralus has undergone significant development. From its beginnings as a renowned Roanne pastry shop, it has transformed over the years into a company with nearly 180 employees, and whose influence extends beyond the borders of France.
This transformation is part of a rich and passionate history, marked by a decisive turning point in 1955 with the creation of the Praluline©, now famous well beyond Roanne. This unique brioche, filled with pink praline shards, perfectly embodies the spirit of innovation and the know-how of the house.
The Praluline© has become the emblem of Maison Pralus, accompanying the opening of around twenty boutiques across France.
Not forgetting the chocolate factory
When François Pralus took over the reins of the family business, he developed his passion for chocolate, after having trained with Bernachon: creating his own chocolate, from the rigorous selection of cocoa beans to the creation of exceptional finished products, the bean-to-bar, of which he was one of the pioneers in France.
This ambition first took root in the heart of Roanne, within the original pastry shop, but as the space there quickly became insufficient, the installation of a dedicated factory became an obvious choice.
Today, the people of Montbrison can enjoy high-end chocolate and experience a trip around the world, by tasting our bars made with cocoa chosen according to their origin.
The factory, the true beating heart of the Pralus chocolate factory, embodies the culmination of François Pralus' dream. It brings together in one place all the essential steps for creating an exceptional chocolate: from receiving the beans, from the best plantations, to roasting which enhances their aromas, through conching which ensures an incomparable texture, to the final molding.
But it is not limited to the production of chocolate, it is also the place where pralines, confectionery and all the pastries sold in the shops of Roanne, Charlieu and Renaison are born. This unique place reflects François Pralus' desire to control each stage of production, thus guaranteeing the quality and authenticity of the products offered to chocolate lovers.
