The story of François Pralus, master chocolatier
Born into a family of enthusiasts, François Pralus followed in the footsteps of his father, Auguste Pralus, founder of the Pralus house in Roanne in 1948. In 1988, Auguste entrusted his son with the mission of perpetuating the tradition of the House. François, after taking over the family business, realized the passion that had driven him since his training: producing his own chocolate from cocoa beans.
His career is marked by a quest for excellence and taste. He has traveled to the four corners of the world to select the best cocoa beans. François created his own cocoa plantation from a primary forest. His commitment and creativity are reflected in his creations, including the Fortissima 80% bar, an intense chocolate made from a blend of three cocoas.
Beyond chocolate production, François also devoted himself to the development of Maison Pralus, which now has 19 boutiques in France.
The house specialty: La Praluline©
The Praluline©, this brioche overflowing with pink pralines, is the work of Auguste Pralus, awarded the title of Meilleur Ouvrier de France in 1955. A true symbol of regional gastronomy, this Roanne specialty has earned itself a special place in the hearts of the people of Lyon who now consider this delicacy as one of their must-haves.

The process of creating Pralus chocolates
The process of creating chocolates at Pralus is a matter of expertise and passion. François Pralus chooses to work his chocolate at 75%, a percentage that he considers ideal to fully appreciate the qualities of each bean origin.
After arriving at the factory, the cocoa beans undergo a meticulous and delicate transformation process. Each step is carried out with care and precision, to obtain a superior quality chocolate, rich in flavors.

Beyond Lyon, Maison Pralus is proud to have a national presence with its 19 boutiques scattered across France.
Paris has the privilege of hosting two of these boutiques, one of which is located on rue Cler, in the 7th arrondissement.
In the Auvergne-Rhône-Alpes region, other cities are lucky enough to have a Pralus boutique. Among them, Roanne, the house's original city, has two boutiques. Charlieu, Renaison and Villefranche each have one.
