This dark chocolate is François Pralus' first recipe and one of his rare blends. Its high percentage compared to the rest of the range, 80%, earns it its name.

Our master chocolate maker wanted it to be powerful and selected beans with aromatic profiles, each bringing their own identity and qualities. Criollo, Forastero and Trinitario for very cocoa notes, fruity, tangy and slightly smoky notes.

With a beautiful purple brown color, fine on the palate, this powerful but well-balanced chocolate also develops aromas of vanilla, sweet spices, and combines bitter and tangy.

A bit of chocolate history: in the 1990s, François Pralus had just taken over from his father Auguste, MOF pastry chef in Roanne. Passionate about chocolate, he began making chocolate from cocoa beans. At the time, there were very few chocolatiers making their own chocolate, only four in France. This is the Fortissima recipe that François Pralus presented to his father after months of testing. “He found it quite good,” he says today, and reinforced his ambition to become a master chocolatier.
